In the province of Trieste there are two DOC denominations, the first of which is the Carso DOC, shared with the province of Gorizia and where you can do Wine Tasting Trieste. The wines are produced from the Terrano, Chardonnay, Glera. Malvasia Istriana, Pinot Grigio, Sauvignon, Traminer aromatico., Vitouska, Cabernet Franc, Cabernet Sauvignon, Merlot and Refosco dal Peduncolo Rosso vines.

Other DOC present in the province of Trieste is the Prosecco DOC, known above all for its sparkling and semi-sparkling wines, produced from the Glera, Glera lunga. Verdiso. Bianchetta Trevigiana, Perera, Chardonnay, Pinot Bianco, Pinot Grigio and Pinot Nero vines, the latter used for the Prosecco rosé type. The DOC is shared with the provinces of Udine, Gorizia and Pordenone in Friuli. As well as in the Venetian provinces of Belluno, Padua, Venice, Vicenza, Treviso.

The Carso is characterized by a limestone landscape with a rocky and infertile soil that has challenged winemakers for centuries.

The numerous natural caves and caverns, even hundreds of meters deep, help drain rainwater, causing a lack of water on the surface. Clays that make up the red earth of the Carso, which cover even just a few centimeters of the limestone substrate, are able to retain an amount of water insufficient for most crops, but ideal for the vine. Which notoriously gives its best when subjected to situations of water stress.

The sea breeze from the Adriatic and the warm winds that come from the hinterland merge resulting in a rather mild climate, essential for the ripening of the grapes.

The altitude of the Carso varies from sea level up to 650 meters, with the vineyards located on hills between 100 and 400 meters above sea level.

To allow for the cultivation of the land, the winemakers have created the characteristic dry stone walls over the years, using materials obtained from the clearing of stones from the land.

The climate of the Carso is intermediate between the Mediterranean and the pre-Alpine continental climate, mitigated by the Adriatic Sea. Precipitation is scarce and this factor, combined with the high permeability of the soil, significantly increases the water deficit, especially during the summer.

The Bora, the most violent wind in Italy and the entire Mediterranean basin, also contributes to further drying out the land. Today the Carso has about 600 hectares of vineyards, cultivated mainly with the native vines of the area.
