The origins of Brunello di Montalcino date back to the second half of the 19th century, when Ferruccio Santi of Montalcino selected and began vinifying grapes from a Sangiovese variety known locally as “Brunello” due to the dark color of the grapes. The maximum grape yield is 80 quintals per hectare, while the production regulations stipulate a wine yield of 68%. It is also permitted to specify on the label the specific area of the territory (“Vigna,” for example) from which the grapes used for winemaking originate.

requires extensive aging before being released for sale: five years from harvest (six for the “Riserva” version), of which at least two years in oak barrels, and no less than four months in bottle (six months for the “Riserva”). It is a wine of great longevity and requires extensive aging before reaching its peak quality.

There are examples of Brunellos aged for periods ranging from 10 to 30 years or more. The minimum alcohol content is 12% (or 12.5% if the “vigna” label is specified). The minimum total acidity is 5 g/liter, while the net dry extract must be no less than 24 g/liter. It should be served at room temperature (around 18-22°C), in large, well-lit glasses that allow for a full appreciation of its complex and nuanced bouquet. In the case of vintage wines, it is preferable to first decant and carafe them so that they can re-oxygenate adequately, while at the same time getting rid of the sediment on the bottom.
